All you need for this is some rice, 2 eggs, one or two onions, salt, pepper and soy sauce for seasoning and that’s it. Usually made with a wok, the rice can be cooked just fine in a normal frying pan, with about 2 tablespoons of oil added. Best the eggs lightly and put them in the pan until before they dry. Take them out and put the rice, after adding two more tablespoons of oil. After stirring for a few minutes add the eggs back and chopped onion and stir everything together.
For a quick and easy recipe of pineapple fried rice it takes some of the same ingredients but with canned pineapple and shrimp as well. Red bell peppers, carrots, onions, Jalapeno peppers, garlic, ginger, jasmine and curry also make their way into this recipe. The vegetables are added at about 1-2 minutes apart, leaving the pineapple and shrimp last, while stirring continuously. The rice is last, with the soy sauce; stirring and tossing are best to cook everything evenly.
Another easy one plate Chinese recipe is for Broccoli with Oyster sauce. The recipe is made with Chinese broccoli but normal ones will do with no problem. After cutting the broccoli a saucepan is filled with enough water to cover up everything, without putting the broccoli in; salt, baking soda and ginger are also added here and boiled together. A sauce with water, chicken broth, rice wine and oyster sauce is made in a separate pan. The broccoli is put in the first saucepan and left 4 minutes then rinsed and drained. The sauce is perfect on the broccoli.
